Packing a tart, sweet, and rich buttery flavor, these awesome lemon squares are ridiculously easy to prepare and make a great summertime dessert bar. Recipe adapted from father's bakery recipe.
Shortbread Cookie Crust
combined. Press into a greased 9 x 13-inch pan. Set aside.
Preheat oven to 350°F.
Slightly beat eggs until frothy. Add sugar, lemon juice, lemon zest, baking powder, flour, and salt, and beat until well combined. Pour over cookie crust, and bake for 30-40 minutes, or until set. Remove from oven and let cool completely. Generously dust top with confectioners sugar, cut into squares, and enjoy.
