Light and delicately crisp, these oven-baked collard green chips are an awesome way to enjoy the South's favorite leafy-green vegetable as a healthy snack food. Nosh on, y'all. Enjoy.
Preheat oven to 300°F. Thoroughly rinse collard greens and pat dry. Remove leaves from center-spine and tear into desired sized pieces. Place in a single layer on baking sheets and spray with olive oil cooking spray. Sprinkle lightly with salt, garlic powder, and red pepper flakes. Bake 10-15 minutes. Remove from oven and let cool slightly. Can be stored in a loosely-closed paper bag for up to three days.
