These awesome 6-ingredient no-bake chocolate and pecan date bars are crazy simple to prepare. Throw all the ingredients into a food processor, pulse, press into a pan, cover with chocolate, and you're done. Seriously simple. Kosher-for-Passover, gluten-free, and vegan. Enjoy, y'all. PS. Line an 8-inch square baking pan with wax paper or parchment paper. Set aside.
Add dates and almond butter to a food processor. Blend for 1-2 minutes, or until you get a sticky and crumbly mixture. Add 1 cup of pecans, vanilla, and salt. Blend another 45 seconds to 1 minute, or until pecans are fully incorporated and mixture is soft and crumbly. Add remaining 1/2 cup of pecans and pulse mixture a few times to chop the pecans into small pieces. Spoon mixture into prepared baking pan and press down and smooth mixture into an even layer.
Combine chocolate chips and 1/4 cup, plus 1 tablespoon of almond butter over a double boiler set over medium heat; stir mixture until chocolate has completely melted and mixture is smooth. Pour the chocolate over the pecan-date layer and spread evenly across the top. Refrigerate for 1 hour, or until firm. Cut into 36 (3 1/2-inch) squares. Enjoy, y'all.
