Light and creamy on the inside+ crispy and golden on the outside. Awesome. Simple. Foolproof. Delectable. Oily. Need I say more? Or as they say in this here 21st century, enough said.
Place onions in a small bowl and cover with boiling water to re-hydrate. Set aside and allow onions to absorb the moisture and "revitalize". (Think of this as a Frankenstein type recipe, if you will.) Season the eggs with garlic powder, salt, seasoned salt, and pepper, and lightly scramble. In a large mixing bowl, combine the potatoes, seasoned eggs, baking powder, and flour/starch, and stir to combine.
In a large skillet, over a medium-high flame, heat between 1/4-1/2 cup oil to 365°F. Test to ensure oil is proper frying temperature by dropping in a single potato shred or small piece of onion and noting if it sizzles immediately.When oil is ready, scoop in the latke batter and press down immediately with the back of a solid spatula. Fry for 3-6 minutes on each side, or until golden brown and firm. Remove from oil and drain on a paper towel-lined plate or pan. Serve hot with your favorite applesauce and/or sour cream.
