In this masterpiece of a salad, Southern winter greens and an eclectic pairing of fruits and vegetable come together beautifully to create a vibrant, colorful, salad with a wonderful combination of flavors. Collard greens, the South's favorite vegetable, add a nice crunch and depth of flavor, well-complemented by the richness of the toasted pecans, the sweetness of the pear and currants, and the most amazing salad dressing. Mix all ingredients together in a large bowl. (Yes, it's as simple as that.) Set aside.
Combine all ingredients in a glass jar or cruet with a lid. Cover jar/cruet with lid and shake vigorously until dressing is well mixed. Pour dressing over salad and toss to coat.
* To toast pecans: Preheat oven to 400°F. Arrange pecans on a cookie sheet and toast for 5-6 minutes, keeping a close eye on them to ensure they don't burn.
