Georgia's official state vegetable, the Vidalia onion is a variety of sweet onion, noted for its unique sweetness, due to the low levels of sulfur in the soil in which it is grown. Combined with buttery round snack crackers and Parmesan and mozzarella cheeses, Vidalia onions rock this awesome cheesy casserole. I give you dairy southern goodness. Sweet, savory, and simple. Preheat oven to 325° F.
In a large frying pan/skillet, saute the onions with the butter for 15-20 minutes, over medium-high heat. Gently beat the eggs into the onions and mix until well incorporated. Spoon half of the onions into a lightly greased 7 1/2 x 12 casserole dish. Top with snack crackers and 1/2 of the Parmesan cheese. Top with the remaining onions, followed by more crackers and cheese. Generously sprinkle mozzarella cheese on top. Bake, uncovered, for 30 minutes. Serve hot. Enjoy.
