Bourbon and Coke jelly makes an awesome addition to any collection of jams, jellies, and preserves, especially during the cold-weathered winter months, which call for the ultimate in warming, Southern comfort foods. Simple to prepare, and makes for an awesome gift for any bourbon and/or Coca-Cola aficionados.
Combine Coca-Cola, bourbon, and sugar in a large saucepan. Bring to a boil, stirring constantly. Once the mixture has reached a rolling boil, briskly stir in the pectin. Return to a boil, and boil for 1 minute. Remove from the heat and pour into a large Mason jar. Allow to cool at room temperature for 3-4 hours, or until the liquid has congealed into jelly. Refrigerate and enjoy. Note: If the jelly does not set initially after refrigeration, bring mixture back to a boil and add another 3 oz. liquid pectin and 1 1/2 cup sugar, and repeat above process.
